Beppino Occelli
Grazie all'impegno e alla passione profusi nel settore, a partire dal 1976 allorché cominciò la sua attività, Beppino Occelli ha avuto le occasioni più felici ed istruttive per seguire da vicino, forse da una posizione di privilegio, una evoluzione del gusto che é tuttora in pieno sviluppo. In alcuni casi egli ha addirittura saputo anticipare i tempi, prima col burro, ottenuto rigorosamente da panne pregiate, e successivamente con i formaggi: dalla famosa Tuma dla Paja fino al rarissimo Escarun, considerato unanimemente una autentica ed inimitabile prelibatezza. E', la sua, una personalissima storia del gusto - per un certo periodo si é occupato pure di tartufi bianchi - ricca di intuizioni, progetti e soddisfazioni. Ma anche di sacrifici ed incomprensioni a causa di una mentalità e di uno stile di vita imposta dalla logica industriale e dall'impoverimento culturale della campagna e della montagna. E' una storia, quella di Beppino Occelli, che probabilmente si spiega con il suo profondo e indissolubile amore per il territorio dove é nato. Lo vive intensamente, giorno dopo giorno, e ne conosce ogni angolo più intimo e riposto. Ed é perfettamente convinto della enorme potenzialità che il territorio, con le opportune sinergie, può esprimere a tutti i livelli
